Arrived in 2012 at Atelier m’alice, Olivier Coquelin now accompanies clients in their search for performance. During a training, the most important thing for Olivier is to understand the expectations and needs of the client in order to increase his skills.
At each stage, he customizes and focuses his intervention on the technical nature of the product, on knowledge and mastery of fermentation techniques and manual processing. Its objective is to provide the most rational training possible so that customers can easily implement it in the bakery.
For Olivier Coquelin, the future of the bakery will depend on the ability of bakers to transmit to consumers the true taste of sourdough bread and good homemade pastries. This vision must be carried out by rigorous craftsmen who use high-quality, healthier meals and natural raw materials.
