The smell of a croissant coming out of the oven, of a warm loaf of bread… It was this sensory appeal that triggered Matthieu Poidras’ vocation as a baker.

Driven by his passion, he began his apprenticeship with the Compagnon du devoir in 2002. After a 2-year apprenticeship, he embarked on a 5-year tour of France, during which he perfected his bakery skills step by step, city by city. The diversity of his apprenticeship enabled him to master the various local specialties inherent to France.

Wishing to deepen his knowledge of the origin of the raw material, flour, Matthieu Poidras moved up the value chain by joining Moulins Fouché as a consultant baker.
