The journey of this champion
From an early age, Mathieu BLANDIN acquired knowledge and know-how through his apprenticeship as a pastry chef and chocolate maker in the Meuse. In 2005, Pascal Caffet and Mathieu worked together to set up an IT management program for the company Le Palais du Chocolat and Mathieu is also responsible for the R&D of this pastry.
His passion for chocolate and pastry allowed him to see his efforts rewarded by being crowned World Champion of the Pastry in January 2013.
Mathieu was Head of Pastry and Manager of 20 pastry chefs in the Pascal Caffet bakery until 2021.
Mathieu is now an international independent trainer.
Passionate pastry chef, he often leads “Logs” training for pastry chefs wishing to improve.
