Leaving Brest at the age of 15 for the Compagnons du Devoir, and arriving at Minoterie Girardeau in 2010 after a detour through Montreal, Frédéric was able to make his tour of France a source of inspiration.
Tours, Lyon, Brussels, Nantes, Paris, Marseille,… each destination has its own «home», each house has its own specialities : colourful experiences that have shaped a unique leg.
We already owe him the «1895» – a famous recipe made from an original mixture of flours of his composition. And for this lover of bread and fermentation techniques, the tour of bakers’ secrets is just beginning…
For the past few years, Fred has been running the “Levains et Tradition” training course. Recognized for this specialty, you can work :
- different leavings,
- the shaping,
- different flours, etc.
The objective is that at the end of your training, you will be able to create and master different leavens (liquid, hard, rye.) in order to multiply recipes and differentiate yourself from your competitors.
